Autumnal Pear Almond Friands
I noticed last week that somehow there are no pear formulas in my blog. Why not? No pear cake, no hearty dish with pears - how sad! That's why I made my way to the market, bought some juicy pears and devised a few recipes. This is then almost directly the advance notice for another - then hearty - pear recipe in the coming days.
But today it's time for a sweet pastry and after I was not very happy with the idea of a cake, I decided rather for small kitchen. It should be friands, pear and almond friands!
Friands are delightful little cakes that are light and airy and simply great. They are prepared for cake rather unconventionally, by mixing ground almonds with raw egg white and stirred in melted butter. At the same time they are stirred together and are also ideal for spontaneous guests.
Friands are often gluten-free, by making them complete with ground almonds, I mixed in some flour. Since it is not very easy to get ground blanched almonds, because they are usually ground with skin, I simply crushed them myself in the Thermomix. If you do not get blanched ground almonds, take normal ground almonds. The cakes will not be as bright then, but they will probably taste just as good!
Otherwise, get the pear almond Fry their delightful juiciness with plenty of lightly browned butter and their delicate texture through the protein. Classically, they are baked in small elongated molds - something like that is of course in my small cake collection, which now occupies an entire shelf ... - mini-box shape *. If you do not have such a shape, you can simply use a muffin sheet and bake about 10-12 small round friands. Have fun copying!
Autumnal pear almond friands
for 8 Friands
150 g of butter
100 g of ground, blanched almonds
125 g of powdered sugar
85 g of flour
1/2 Tl tartar tartar powder
4 egg whites
1 large, firm pear
30 g of planed almonds and some powdered sugar to sprinkle
Put the butter in a small saucepan and melt over low heat. Simmer gently until lightly browned, then remove from heat and allow to cool slightly.
Remove some of the melted butter and grease the baking pan thoroughly.
Put the oven on 175 ° C Preheat top and bottom heat.
Mix well-made almonds, powdered sugar, flour and baking powder in a mixing bowl with a wooden spoon.Add the liquid butter and stir. Mix everything to a smooth dough. Spread the dough evenly over the prepared baking pan.
Peel the pear, quarter, corer and slice lengthwise into thin slices. Take each of the slices overlapping and place on top of the dough. Proceed with all pear slices. Finally, sprinkle the pear slices on the dough with the sliced almond flakes.
Bake the friands in a preheated oven for about 20-25 minutes until lightly browned and baked. Allow to cool on a wire rack. Serve with some powdered sugar to your taste.
The pear and almond friands are easy to keep fresh for a couple of days when packaged in an airtight box and stored in the refrigerator.
