Thanks to fresh rosemary and finely grated cheddar, the shortbread gets a great spicy note. The fine sea salt flakes are wonderfully suitable for this.

Hearty shortbread with cheddar and rosemary


  • 150 g of soft butter
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 225 g of flour
  • 2 tablespoons of finely chopped rosemary needles
  • 50 g fresh grated cheddar
  • 1 egg whisked with 1 tablespoon cream
  • some flour for the work surface



Beat butter, sugar and salt until creamy. Add the flour, rosemary and cheddar and quickly knead into a smooth dough.

Wrap the dough in cling film, press flat and put in the fridge for at least 1 hour.

Then preheat the oven to 200 ° C top and bottom heat and lay out 2 baking sheets with parchment paper.


Put the batter on the lightly roll out floured work surface about 0.5 cm thick.Put on the prepared sheets.


Bake hearty shortbread in preheated oven for 12-15 minutes until golden brown and crispy. Then let cool completely on a wire rack. Store in an airtight box until served to keep the shortbread crispy.
