I recently discovered these waffles at Barefeet in the Kitchen through Pinterest and wanted to bite right away. So I got down to it and rewrote the recipe for my taste. The result is delicious, fluffy, juicy waffles. I serve them with an open butter flavored with honey and cinnamon and that's incredible, incredibly good. The butter is also a blast on pancakes or toast, so it's worth doing a bit more. As always, I have frozen the waffles one at a time and can simply take them out of the freezer and crumble them up if necessary. Super practical!

Sweet pumpkin waffles with honey and cinnamon butter

for 10-12 waffles

Ingredients for pumpkin waffles:

225 g of pumpkin puree (recipe see below)
350 g buttermilk and 3 eggs (size L )
300 g flour
1 heaped tartar tartaric acid powder
1 pinch of salt 1/2 tsp cinnamon
1 pinch of grated nutmeg, star anise and vanilla pod (or gingerbread spice)
60 g sugar
possibly. a little grease for the waffle iron

Preparing the pumpkin waffles:

Preheat the waffle iron * to medium heat and brush with a little butter or oil if necessary.

Mix the pumpkin puree with the buttermilk in a large mixing bowl with a large whisk.Add the dry ingredients to the pumpkin-buttermilk mixture with a bang and mix it with a wooden spoon into a waffle dough.

Gradually add the prepared dough to the prewarmed waffle iron and add some juicy for a few minutes Bake waffles. Allow to cool on a wire rack and serve warm with the whipped honey and cinnamon butter.

Ingredients for the pumpkin puree:

1 small Hokkaido pumpkin

Preparing the pumpkin puree:

Scrub the pumpkin thoroughly, but do not peel it. Halve, scrape out the seeds with a tablespoon and use otherwise and cut off the woody ends.
Cut the pumpkin pulp into cubes of about 5 cm and cook in a little pot of water for about 15-20 minutes until the pumpkin has softened is. I like to cook the pumpkin in the Varoma in the Thermomix: Simply weigh in 500 g of water into the mixing pot, place the pumpkin pieces in the Varoma and cook for 20 minutes/Varoma/stage 1. The whole thing is of course also in a conventional steamer or on the stove.

Give the soft pumpkin pieces (without water) in the Thermomix, the blender or a mixing bowl with blender and finely puree. Let the puree cool to room temperature and weigh the desired amount for the pumpkin waffles.

Remaining pumpkin puree can be used wonderfully for sweet and savory pastries, pumpkin spice syrup, hearty yeast snails, etc. Well packaged, it will easily last a few days in the fridge.

Ingredients for honey and cinnamon butter:

150g soft butter
3 tbsp honey and 1/2 tsp cinnamon

Preparation of honey cinnamon butter:

Put all ingredients in the mixing bowl of the food processor or a mixing bowl. Serve for a few minutes with the balloon whisk of the food processor or with the whisk of the hand mixer.
Serve with the pumpkin waffles.
When kept in the fridge, the honey and cinnamon butter will last for several days.
